Samphire is a name given to a number of very different, edible plants, that happen to grow in coastal areas.&lt;br /&gt;

For culinary purposes, certainly in the United Kingdom, marsh samphire, (shown) is the one you will usually find.  I&amp;#039;ve seen it in fishmongers a few times.&lt;br /&gt;
&lt;br /&gt;
Boil it or steam it for a few minutes and serve with [[butter]], rather as you would [[asparagus]].  Because is has a salty, sea-like flavour it is a good accompaniment for [[fish dishes]].&lt;br /&gt;
