Also known as &amp;#039;&amp;#039;&amp;#039;Also known as the Salato di Sauris&amp;#039;&amp;#039;&amp;#039;, Salato duro Friulano is made using fresh [[Cheese|cheese]], which is then matured for 6 months during which time it will harden.  It is produced all year round in Sauris in the province of Udine and also in the mountain areas of Carnia and Pordenone.  Unfortunately it is in danger of becoming extinct.&lt;br /&gt;
