Saint Nicolas-de-la-Dalmerie is a soft. [[Goats&amp;#039; milk cheese|goats&amp;#039; milk cheese]] from the Hérault department of Languedoc-Roussillon.  It has a bloomy white rind, a dry texture and a mild strength.  Coming straight from the fragrant region of La Dalmerie, it is unhurriedly produced in an abbey. There it obtains its bright flavours of [[Thyme|thyme]] and [[Rosemary|rosemary]], is gentle and fresh, and firm when put in the mouth where it melts on the palate in an effusion of aromas.&lt;br /&gt;
