Saint Jacques is an artisan soft, [[Cows&amp;#039; milk cheese|cows&amp;#039; milk cheese]] produced by the Ferme de la TremblayeIle at Rambouillet in the Ile de [[France]] region of France.  It has a white, bloomy rind and a mild flavour reminiscent of [[Fungi|fungi]].  It is round in shape, with a diameter of 13 cm, is 3 cm. thick and weighs 350 g.  The [[Fat|fat]] to dry matter content is 45%.  It has a  thin rind and the soft interior has a creamy, firm texture that varies from firm to almost liquid.&lt;br /&gt;
