Rigotte du Forez is a tiny [[Cows&amp;#039; milk cheese|cows&amp;#039; milk cheese]] from the Loire département of the Rhône-Alpes. The [[Milk|milk]] can be [[Pasteurised|pasteurised]] or [[Unpasteurised|unpasteurised]] and historically [[Goats&amp;#039; milk|goats&amp;#039; milk]] was used. It is semi-soft with a slightly mouldy bright [[Orange|orange]] natural rind and is matured for 2-3 weeks. Some of the [[Cheeses|cheeses]] are macerated in [[White wine|white wine]]. It is consumed throughout the year and weighs 65g. Cylindrical in shape, it has a diameter of 5cm and a height of 3cm.&lt;br /&gt;
