Rigatino di Castel San Pietro is a mixed [[Milk|milk]] [[Cheese|cheese]] from Castel San Pietro in Emilia-Romagna.  It is made with three parts [[Ewes&amp;#039; milk|ewes&amp;#039; milk]] to one part [[Cows&amp;#039; milk|cows&amp;#039; milk]] and is produced throughout the year.  Matured for up to 40 days, it has a cylindrical shape with a soft, pale yellow rind. The interior is compact and has a sweet taste.&lt;br /&gt;
