[[Ricotta]] salata di Mammola is a fresh, [[Smoked|smoked]], [[Goat&amp;#039;s milk|goat&amp;#039;s milk]] [[Cheese|cheese]] from the Mammola area of Calabria.  It is made on family farms.  It is cylinder shaped with an enlarged, [[Mushroom|mushroom]] shaped head and is a dark pinky-[[Brown|brown]] colour on the outside and white on the inside.  The flavour is slightly salty, with a soft, velvety texture and a smokey aroma.  It is 35cm long, has a diameter of 10cm and can weigh between 700g and 1kg.&lt;br /&gt;
