[[Ricotta]] Testa di Morto is produced with the [[Whey|whey]] from [[Ewes&amp;#039; milk|ewes&amp;#039; milk]] on the island of Sardinia.  Matured for 20-30 days, it has a very thin rind, almost absent.  It is white and has a firm, but tender texture.  It is produced from November to July in the whole region, and is used as a table [[Cheese|cheese]].  Each [[Cake|cake]] shaped cheese weighs 1.5-2kg.&lt;br /&gt;
