===Method===&lt;br /&gt;

| Melt the [[smen]] or [[Butter|butter]] in a large saucepan, add the [[Onion|onion]] and [[Fry|fry]] until soft.&lt;br /&gt;
| Add the [[Meat|meat]], [[Tomatoes|tomatoes]] and [[Tomato|tomato]] purée and cook for 5 minutes.&lt;br /&gt;
| Add the [[Stock|stock]], drained [[Chickpeas|chickpeas]] and the [[Spices|spices]] and stir well.&lt;br /&gt;
| Bring to the [[Boil|boil]] and place a [[Muslin|muslin]] lined [[Colander|colander]] over the top of the pan.&lt;br /&gt;
| Break the [[Noodles|noodles]] or [[Spaghetti|spaghetti]] into 5 cm lengths and place them in the [[Colander|colander]] with a little of the [[Meat|meat]] [[Sauce|sauce]].  If using a proper [[couscoussière]], add the noodles 15-20 minutes before the end of the cooking time, moistening them regularly with the [[Sauce|sauce]].&lt;br /&gt;
| Cover the [[Colander|colander]], lower the heat and [[Simmer|simmer]] for 20 minutes.&lt;br /&gt;
| Remove 1 or 2 ladlefuls of the [[Sauce|sauce]] from the pan and again, pour it over the [[Noodles|noodles]], making sure that all pieces are moistened.&lt;br /&gt;
| Cover the [[Colander|colander]] again and [[Simmer|simmer]] for a further 40 minutes until the [[Meat|meat]] and [[Chickpeas|chickpeas]] are tender, moistening the [[Noodles|noodles]] every 10 minutes.  If using tinned [[chickpeas]], add them 10 minutes before the end of the cooking time.&lt;br /&gt;
