Renàz is a [[cheese]] from Livinallongo in the province of Belluno which is made from the [[milk]] of the Bruna Alpina breed of cow.  It consists of two-fifths semi-skimmed and three-fifths whole [[milk]].&lt;br /&gt;
&lt;br /&gt;
The [[cheese]], which is produced from December to May is semi-cooked and semi-hard.  It is salted in [[brine]] for two days and is anointed with [[linseed]] oil for three months.&lt;br /&gt;
&lt;br /&gt;
Matured for up to 1 year, Renàz has a height of 8 cm, a diameter of 30 cm and weigh around 5.5 kg.  It has a hard, yellow rind, a cylindrical shape and a light straw-coloured interior with holes.  It has a somewhat spicy flavour.&lt;br /&gt;
