Raviggiolo di pecora aka &amp;#039;&amp;#039;&amp;#039;Giuncata&amp;#039;&amp;#039;&amp;#039; is a cone-shaped [[Ewes&amp;#039; milk cheese|ewes&amp;#039; milk cheese]] from Tuscany.  It is white in colour with a sweet and delicate taste and a creamy, spongy texture.  It is made by [[Boiling|boiling]] down the [[Whey|whey]] that remains after the separation of the [[Curd|curd]],  When the it reaches a temperature of 90°C it is turned gently with a spoon to make it scroll. The [[Curd|curd]] formed is allowed to drain on wooden boards.  After draining, the [[Cheese|cheese]] is packaged in plastic trays or baskets.  It is produced from November to June.&lt;br /&gt;
