Raviggiolo di latte vaccino del Mugello is a soft, fresh, [[Cows&amp;#039; milk cheese|cows&amp;#039; milk cheese]] from Palazzuolo sul Senio, in the province of Firenze in Tuscany.  It is rindless, cylindrical shaped and weighs about 1kg.  White in colour, it has a slightly sour, yet almost sweet flavour and a milky aroma.  The [[Cheeses|cheeses]] are packaged in parchment paper and / or heat-sealed trays.&lt;br /&gt;
&lt;br /&gt;
[[Pasteurised milk]] is inoculated with thermophilic [[Lactic|lactic]] cultures and [[Salt|salt]] and liquid natural [[Rennet|rennet]] ([[Fig|fig]] latex or [[Dried|dried]] [[Lamb|lamb]]&amp;#039;s stomach) is added . After successful coagulation, the [[Curd|curd]] is manually transferred directly into moulds and placed in cold storage at 4°C. The [[Cheese|cheese]] is delivered the same day or the following morning.&lt;br /&gt;
