Río Vero is produced by Quesos Radiquero from pasteurised goats’ [[milk]] in Somontano in the province of Huesca.  They are hand-made and the goats feed on shoots, fresh grass, [[berries]] and wild [[fruit]] in the Sierra de Sevil.  &lt;br /&gt;
&lt;br /&gt;
It is a soft [[cheese]], with an edible, blue, mouldy rind and a white interior which is matured for 30 days.  The initial acidic taste leads to a creaminess which causes it to stick to the palate, with a long intense flavour.  It is recommended that it should be consumed before four months, but it left for longer, the flavour will be enhanced.  In 1990, it received a ‘Special Decoration’ (Condecoración Especial) in 1991, and numerous other awards.  It is produced in rounds of 400 g and measures approximately 8 cm in diameter and 7 cm in height and is also available as a block measuring 22 cm by 5 cm.&lt;br /&gt;
