| Mix the [[Flour|flour]], [[salt]] and [[Pepper|pepper]] together and dredge the [[sirloin]] strips in the [[Flour|flour]].&lt;br /&gt;
| Heat the [[Oil|oil]] and [[Butter|butter]] in a [[Wok|wok]] and when sizzling, add the [[Shallots|shallots]].&lt;br /&gt;
| Cook for 3 minutes then add the [[Mushrooms|mushrooms]].  Cook for a further 2 minutes them remove and reserve with a [[Slotted spoon|slotted spoon]], leaving the [[Oil|oil]] behind.&lt;br /&gt;
| Add the [[Beef|beef]] on sauté until [[Browned|browned]] (about 3 minutes)&lt;br /&gt;
| Add the [[Brandy|brandy]] and set alight with a match. When the flames die down, add the [[Shallots|shallots]] and [[Mushrooms|mushrooms]] back to the [[Wok|wok]].&lt;br /&gt;
