Quesos Arribes de Salamanca are made by various producers from ewes’ [[milk]] in the Arribes de Salamanca.  The production takes place in industrial dairies, but traditional methods are used at each stage.&lt;br /&gt;
&lt;br /&gt;
The [[cheeses]] can be matured for two, five and twelve months and are of excellent quality.  The rinds can vary from natural to dark and are slightly oily. They have a pleasant smell, and a spicy taste which intensifies as they mature.&lt;br /&gt;
