Queso de flor is a [[DOP]] [[cheese]] produced in the municipalities of Santa María de Guía, Gáldar and Moya on Gran Canaria, but is also made on Tenerife.  &lt;br /&gt;
&lt;br /&gt;
This cheese is made by mixing cow’s and ewe’s [[milk]], and a crust consisting of a yellow and cream interior and slightly bitter taste of fat.  It may also contain partly goat’s [[milk]].&lt;br /&gt;
&lt;br /&gt;
As a curious detail, the [[cheese]] is curdled with [[artichoke]] or [[cardoon]] flowers.  The plants flower in April and May, so they are cut and kept so that they don’t dry out and are used in an appropriate quantity for curdling the [[milk]].  It is for this reason that the chesses is so named:  &amp;#039;Queso de flor&amp;#039; literally means &amp;#039;flower cheese&amp;#039;.  They are decorated with geometric designs for identification purposes.&lt;br /&gt;
&lt;br /&gt;
Usually eaten on its own, Queso de flor is sometimes used in many dishes, including stews.&lt;br /&gt;
