Tronchón is a semi-hard [[cheese]] produced from a mixture of goats’ and ewes’ [[milk]] in the Maestrazgo areas of the provinces of Teruel (Aragón) and Castellón (Comunidad Valencia).&lt;br /&gt;
&lt;br /&gt;
The [[cheese]], which is very popular in Spain, has a smooth, buttery, aromatic fresh flavour and a springy, creamy texture with several small holes.  In some ways, it is similar to a young [[Caerphilly cheese|Caerphilly]] and has a bone-white interior and a smooth, butter-coloured rind.&lt;br /&gt;
&lt;br /&gt;
Sold in various degrees of maturity, the [[cheese]]’s appearance is that of a fat cylinder that has been punched in on the top.  It was mentioned in Cervantes’ &amp;#039;&amp;#039;Don Quixote&amp;#039;&amp;#039;.&lt;br /&gt;
