Queso de Los Carriles is an artisan, whole cows’ [[milk]] [[cheese]] from the area of Los Carriles and the village of Injiestu in the ‘concejo’ of Llanes.&lt;br /&gt;
&lt;br /&gt;
The [[milk]] is heated to 30-40 ºC and stirred for 30 minutes.  The curds are cut, drained and placed into moulds, where they can drain further and are turned every two hours.  After 48 hours, the [[cheese]] is immersed in [[brine]] and allowed to mature for one week.&lt;br /&gt;
&lt;br /&gt;
The [[cheese]] has a soft, creamy interior, which is white in colour, and a pale yellow rind.  It is rectangular in shape and weighs around 400 g.  Those produced in Los Carriles are smaller than those from Injestu.&lt;br /&gt;
