Queso de Jarra is produced by Los Corrales, in Almedijar, a town in the province of Castellón, which is located in the natural park of the Sierra de Espadán.   It is, in fact, a [[Cheese|cheese]] made from [[Goats|goats]] or [[Ewes|ewes]]’ [[Milk|milk]] cheese or a mixture of both. &lt;br /&gt;

It is first matured as a [[Cheese|cheese]], then cut, beaten and mixed with [[Whey|whey]] to cause a natural [[Ferment|ferment]].&lt;br /&gt;
&lt;br /&gt;
It is then matured for 6 months to 2 years and sold in jars of 150g.&lt;br /&gt;
&lt;br /&gt;
The [[Cheese|cheese]] is ivory-coloured and turns light [[Brown|brown]] depending the length of time it is matured.  The texture is very soft and smooth. It has a very strong smell of old [[Cheese|cheese]] and [[Alcohol|alcohol]]. It has a strong flavour with a persistent and leaves a greasy feeling in the mouth.&lt;br /&gt;
