Queso de Genestoso is a cows’ [[milk]] cheese that is produced almost exclusively in Genestoso or «Xenestoso» in the ‘concejo’ of Cangas del Narcea in the Asturias.  Traditionally ewes’ and goats’ [[milk]] was used.  Its production has now almost disappeared, whilst the Ministry of Agriculture has submitted a plan for revitalizing it.&lt;br /&gt;
&lt;br /&gt;
The [[cheese]] has a yellowish white interior and clear yellow rind.  It weighs less than a kilogram and has a cylindrical shape with a &amp;#039;wasit&amp;#039; around the middle. It is also known as &amp;#039;&amp;#039;&amp;#039;Queso Xenestoso&amp;#039;&amp;#039;&amp;#039; or &amp;#039;&amp;#039;&amp;#039;Xinistosu&amp;#039;&amp;#039;&amp;#039;.  &lt;br /&gt;
