Queso de Fuente is an unpasteurised cows’ [[milk]] [[cheese]] produced in several localities in the ‘concejo’ of Proaza.  It gets its name from the brown containers in which it is made.&lt;br /&gt;
&lt;br /&gt;
The [[cheese]] is matured for three months and mixed with [[brandy]].  It has a strong and spicy taste and aroma and is yellow-white in colour, with a soft texture.  However, production quantities are low, so it may well be very difficult to find.&lt;br /&gt;
