Queso de Collada is a small cylindrical [[cheese]] made from pasteurised goats’ or ewes’ [[milk]] in the area of Cirieñu ‘concejo’ of Amieva.&lt;br /&gt;
&lt;br /&gt;
The goats’ [[milk]] version of the [[cheese]] is white with a rough rind which is white or yellowish white with brown spots.  It has a soft, persistent, balance flavour with an aroma of citrus and a fine, elastic texture&lt;br /&gt;
&lt;br /&gt;
The ewes’ [[milk]] version of the [[cheese]] has a pleasant taste and a lactic aroma.  The interior is white with holes of various sizes and has a soft, fairly moist texture.&lt;br /&gt;
