Queso de Caxigón is an artisan [[cheese]] made with pasteurised cows’ [[milk]] in Berodia in the ‘concejo’ of Cabrales.&lt;br /&gt;
&lt;br /&gt;
The [[cheese]] has a pleasant, complex flavour and a strong, penetrating aroma.  The texture is slightly doughy and the interior is white.  The rind is yellow, with a greenish-blue hue.  It is cylindrical and weighs between 300 and 400 g.&lt;br /&gt;
