Each cheese weighs between 400 g and 2.8 kg.  The rind is soft and its colour is off-white.  The cheese is also pale and had a firm and creamy texture.  The flavour is soft, but slightly bitter. The cheeses are matured for at least seven days.&lt;br /&gt;
