Provolone Sardo is a [[cows&amp;#039; milk cheese]] from Arborea, Santa Maria la Palma and Bortigali in Sardinia.  It is a larger form of [[Peretta cheese|Peratta]] and matures for 3-6 months.  It is 40-50cm high, 12-15cm in diameter and weighs 5-10kg.  It is cylindrical, with a straw coloured rind and paste and has a compact texture.&lt;br /&gt;
