While on holiday in [[France]] recently we discovered what a marvellous [[Marinade|marinade]] [[Calvados|calvados]] (&amp;#039;&amp;#039;apple brandy&amp;#039;&amp;#039;) was for [[Pork|pork]] steaks, so once home we tried a sort of [[Tex-Mex|tex-mex]] version to accompany the [[French]] [[Haricot beans|haricot beans]] cooked in [[Duck fat|duck fat]] - very Basque!&lt;br /&gt;

| 1 tablespoon [[Olive oil|olive oil]]&lt;br /&gt;
| 6 tablespoon [[Masa Harina|masa harina]] - fine or coarse [[Yellow cornmeal|yellow cornmeal]] works almost as well for this&lt;br /&gt;

* Leave to [[Marinade|marinade]] in the [[Fridge|fridge]] for an hour or more if possible shaking now and then to ensure a good cover&lt;br /&gt;
* Preheat the [[Grill|grill]] or [[Griddle pan|griddle pan]] - I used a Breville electric grill&lt;br /&gt;

| Add the [[Masa Harina|masa harina]] to a large place and press the steaks into the [[Flour|flour]] to coat&lt;br /&gt;
| [[Oil]] the [[Grill|grill]] with a little [[Olive oil|olive oil]] and [[Griddle|griddle]] for about 8 minutes - turning once if not using a double-sided griddle&lt;br /&gt;
| Leave to [[Rest for|rest for]] 5 minutes&lt;br /&gt;
| Serve&lt;br /&gt;
