[[Pecorino]] sott&amp;#039;olio is a [[Ewes&amp;#039; milk cheese|ewes&amp;#039; milk cheese]] from Abruzzo, [[Italy]] where it is produced from mid-November to late June in the area of Atri in the province of Teramo and Penne in the province of Pescara.  The [[Cheese|cheese]] is matured for 8 months in a dark place, during which time it is cut into pieces and put into [[Sunflower|sunflower]] or [[Soya oil|soya oil]].  The pieces can be cut small or into 1 larger piece weighing 400g.&lt;br /&gt;
