[[Pecorino]] di Palesio is a [[Ewes&amp;#039; milk cheese|ewes&amp;#039; milk cheese]], produced almost all year round in the area of Castel San Pietro in Emilia-Romagna.  Matured for up to one year, it is sometimes rubbed with [[Oil|oil]] and [[Tomato sauce|tomato sauce]].  It is cylindrical in shape and weighs from 800g-2kg.  When fresh, it has a smooth, wild rind, becoming wrinkled as it ages.  The interior is compact and has an intense aroma and spicy flavour.&lt;br /&gt;
