[[Pecorino]] di Moliterno is an uncooked, pressed [[Cheese|cheese]] made with [[Ewes&amp;#039; milk|ewes&amp;#039; milk]] (two thirds) and [[Goats&amp;#039; milk|goats&amp;#039; milk]] (one third) from the mountain community of Val d&amp;#039;Agri in Basilicata.  It has a cylindrical shape with flat sides and weighs between 1-8kg.  The ridged rind is pink and yellow and the interior is a pale grey colour. Of medium strength, the flavour is quite sharp.  It is matured for 8 months during which time it is periodically turned over and rubbed with [[Oil|oil]] and [[Vinegar|vinegar]].&lt;br /&gt;
