Pecorino Umbro is a pasteurised ewes’ [[milk]] [[cheese]] which is produced throughout Umbria. &lt;br /&gt;
&lt;br /&gt;
The [[cheese]] is salty, with a spicy flavour.  The fresh version is matured for up to 2 months, but it is also available after a maturation period of 7-8 months, during which time it becomes harder and more suitable for grating.&lt;br /&gt;
&lt;br /&gt;
Initially, the rind has a white mouldy appearance, but it is treated with [[herb]] flavoured [[olive oil]].  The [[cheese]] can weigh anything from 1.7 to 6 kg.&lt;br /&gt;
