Pecorino Toscano is a [[DOP]] whole ewes’ [[milk]] [[cheese]] which is produced in the entire territory of the region of Tuscany and adjoining areas in the regions of Umbria and Lazio. The [[cheese]] is of very ancient origin, dating back to the Etruscan period and there are numerous historical references to it. The sheep are mainly allowed to graze freely on natural pastureland which is rich in natural essences and gives the [[milk]] its particular qualities.

Made using calves’ [[rennet]], the [[cheese]] is pale straw-coloured and a sweet taste with slightly spicy veins. The pale yellow rind is usually coated with [[olive oil]] and ash. It has a height of 7-11 cm, a diameter of 15-22 cm, and can weigh between 1-3 kg.

The [[cheese]] has a cylindrical shape with a slightly convex base. It can come as soft or semi-hard and the maturation period can vary, depending on whether it is to be consumed as a table [[cheese]] or used for grating. This can be from 40 to 180 days.
