[[Pecorino]] Marchigiano is an [[Unpasteurised|unpasteurised]] [[Ewes&amp;#039; milk cheese|ewes&amp;#039; milk cheese]] from the Monti Sibillini area of the [[Italian]] region of Marche.  Matured for more than 1 year, the chese is 14-20cm in diameter, has a height of 6-10cm and weighs 1-2.5kg.  It has a cylindrical shape, with flat sides and a yellowish to red rind which has been rubbed with [[Olive oil|olive oil]] and has an intense flavour and aroma.  The interior is white with a mellow, aromatic flavour.&lt;br /&gt;
