[[Pecorino]] Leccese is made with [[Ewes&amp;#039; milk|ewes&amp;#039; milk]] with added small amounts of [[Goats&amp;#039; milk|goats&amp;#039; milk]].  It is circular in shape, is 8-10cm high and has a diameter of 18-20cm.  It has a hard, wrinkled yellow to [[Brown|brown]] rind.  Depending on the maturation perios the [[Cheese|cheese]] can be buttery or hard and compact and the taste can be sweet or spicy.  It is matured for 3-4 months and the [[Cheeses|cheeses]] are turned every week.  It is produced in the Magliese Neretina area of Puglia.&lt;br /&gt;
