Patacabra is a semi-soft, rind washed, pasteurised, [[goats&amp;#039; milk]] [[cheese]] from Zaragoza in Aragón.  It is of mild to medium strength and is pressed and uncooked.  It has an open texture with sporadic, small, irregular cracks.&lt;br /&gt;
&lt;br /&gt;
The cheese is in the shape of a convex brick and is washed in brine several times during the 3 week maturation period.  This helps to keep unwanted bacteria at bay and also gives the cheese a spicy flavour.  The edible rind is very firm and is reddish in colour which turns brown as it ages.  The interior is cream in colour.  It is rich and creamy, with a soft and slightly sticky to the touch.&lt;br /&gt;
