[[Pas de l&amp;#039;Escalette]] is a soft, pressed, [[Unpasteurised|unpasteurised]] [[Cows&amp;#039; milk cheese|cows&amp;#039; milk cheese]] with a natural rind.  It is produced on the Larzac plateau in the Auvergne, but is only made in small quantities by one producer.  It is sweet and creamy and melts in the mouth.  During maturation it is lightly washed and is sold after 1 month.&lt;br /&gt;
