Pas de l&amp;#039;Ayau is an [[Unpasteurised|unpasteurised]] [[Cows&amp;#039; milk cheese|cows&amp;#039; milk cheese]] produced by M. Gérard Dubus and his colleagues at Pas de l’Escault farm about 30 miles south of Lille in the Nord département of the Nord-Pas de Calais region of [[France]].  It is an artisan, soft, rind-washed [[Cheese|cheese]] and is matured for 2 months, during which time, it develops a golden rind.  It is 10cm square, has a height of 3cm and weighs 400-450g.&lt;br /&gt;
