| Cut the tenderloin fillet in two pieces&lt;br /&gt;

| With a heavy pan, rolling pin or flat cleaver; smash the fillet flat.  Aim for about 2-2.5 cm thick, though a consistent thickness is more important. Great therapy this!&lt;br /&gt;
