Paddraccio is produced from ewes’ and goats’ milk, in the area of Rotonda in Basilicata.  It has a sweet and sour flavour, no rind, and a soft, white interior.&lt;br /&gt;
&lt;br /&gt;
It is an un-seasoned [[cheese]] which weighs between 300 g and 500 g.  There is tradition saying that this [[cheese]] was used by shepherds as bargaining chips.&lt;br /&gt;
