Pérail Bergeronnette is an [[Unpasteurised|unpasteurised]] [[Ewes&amp;#039; milk cheese|ewes&amp;#039; milk cheese]] produced by Le Fédou Fromagerie de Hyelzas SAS in the Lozère département of Languedoc-Roussillon, which is consumed very fresh or slightly matured.  Pérail is certainly one of the most ancient [[Cheeses|cheeses]] known and it is almost 2,000 years ago when Pliny the Elder said &amp;quot;a [[Cheese|cheese]], round and flat, [[Ewes&amp;#039; milk|ewes&amp;#039; milk]], in the region of the &amp;#039;gabales&amp;#039;&amp;quot; (an ancient [[French]] tribe).&lt;br /&gt;

It is a smooth, fine, supple, slightly creamy [[Cheese|cheese]] with a slightly bloomy rind.  It is matured for 6-9 days to develop its flavour and aroma without it becoming strong.  Each [[Cheese|cheese]] weighs 150g.&lt;br /&gt;
