Nisa is a [[DOP (Portuguese)|DOP]] semi-hard, unpasteurised, Merino ewes’ [[milk]] [[cheese]] from the Alentejo region in the centre and south of Portugal.&lt;br /&gt;
&lt;br /&gt;
The [[cheese]], which is produced from vegetarian [[rennet]] is shaped into discs and then salted.  The texture is soft to semi-hard, with small holes and a yellowish colour.  It has a robust and earthy flavour which becomes herby and citrusy after the initial taste.  The aftertaste is slightly acidic.&lt;br /&gt;
