Neufchâtel is a soft, slightly crumbly, mould-ripened [[AOC]] and [[AOP]] [[cheese]] made in the region of Upper Normandy and Picardy. One of the oldest cheeses in France, its production is believed to date back to the 6th century. &lt;br /&gt;
&lt;br /&gt;
The [[cheese]] looks somewhat similar to [[Camembert]], with a dry, white, edible rind, but the taste is saltier and sharper. It has the aroma and flavour of mushrooms and is slightly tangy and acidic.  Unlike other soft-white-rinded cheeses, it has a grainy texture.  &lt;br /&gt;
&lt;br /&gt;
Available in six different shapes and sizes the [[cheese]] is typically sold in the shape of a heart.  It is matured for 8–10 weeks.&lt;br /&gt;
