[[Mozzarella]] Silana is produced in areas of Cosenza and Catanzaro in Calabria, but is also available throughout [[Italy]].  However, it is a [[cows&amp;#039; milk]] [[Cheese|cheese]] that is made in limited quantities and on request, during the summer.  Rindless, it has a spherical shape, and is elastic, uniform, and milky white.  It has a diameter of 10-14cm with a height of 4-5cm and a weight of 400-500g and tangy, [[Lactic|lactic]] flavour.  It is a spun cheese which is wrapped in reeds or ferns. Unusually, this Mozzarella is consumed as a table cheese and not used for cooking.&lt;br /&gt;
