Monoglyceride and diglyceride flakes (E471), also known as [[glycerine]] flakes are derived from [[fats]], obtained from [[glycerine]] and fatty acids (typically [[vegetable oil]]s) attached to glycerol.  However, they do not contain glycerine.  They are mainly used to emulsify [[fat]] molecules with water and work with all types of products containing water.  It has a high stability rate and must be be broken down with a fatty element, then added to the watery element.  It is sold in the UK under the name Glice and is part of the El Bullí &amp;#039;Texturas&amp;#039; range of additives.&lt;br /&gt;
