Menallack was the first [[cheese]] to be made at Menallack Farm, Penryn near Falmouth and is an unpasteurised, vegetarian, hard, full-fat [[cheese]] produced from cows’ [[milk]].

The [[cheese]] is based on a recipe for a type of [[Cheshire cheese]], but is different in that Cornish cows graze on granite, which ultimately makes a difference to the soil and the grass and therefore the [[milk]]. Using only single herd [[milk]] from local suppliers the [[cheese]] is matured for 2 months.

Manallack is mould ripened and has a creamy texture with fresh taste and a hidden bite to its full flavour. As well as the ‘big’ [[cheese]], a 500 g Baby Menallack is sometimes available.

There are also two other varieties:
