Maiorchino di Novara di Sicilia is a semi-hard, [[Ewes&amp;#039; milk cheese|ewes&amp;#039; milk cheese]] from Sicily.  The [[Milk|milk]] filtered and the [[Cheese|cheese]] is made in a large copper container (codara).  After a couple of days, the [[Cheese|cheese]] is [[Salted|salted]] every 3 days for a  period ranging from 20 to 30 days depending the size.  It is then periodically cleaned and scrubbed for about 2 months and rubbed with [[Olive oil|olive oil]] from the third month.  It is matured for 8 months and weighs 10-12kg, with a diameter of 35cm and a height of 10-12cm.  The texture is compact and it is yellow in colour.&lt;br /&gt;
