Málaga is a fresh [[cheese]] produced in the province of the same name, mainly in the areas of Axarquía, Antequera, Guadalteba, Sierra de las Nieves and Valle del Guadalhorce.. It is made with the pasteurised [[milk]] of the Malagueña breed of goat.&lt;br /&gt;
&lt;br /&gt;
The cheese, which is kneaded by hand, is rindless, with a deep white exterior and a lighter white interior, with small irregular holes.  It is pressed and has a softish, moist, but firm texture.  It has a very sweet, mild, goaty flavour and aroma.  It is slightly salty.&lt;br /&gt;
&lt;br /&gt;
Produced mainly in flat cylinders, the [[cheese]] weighs between 500 g and 1 kg.  It is also known as Serranías de Málaga or Queso de Ronda&lt;br /&gt;
