Los Montes de San Benito is a semi-hard, artisan, vegetarian, ewe’s [[milk]] [[cheese]] produced in Andévalo y the village of Guzmán, in the province of Huelva.  Production had almost died out but has been recently revived.&lt;br /&gt;
&lt;br /&gt;
The hand-made [[cheese]] has a strong oily taste, although the aftertaste is mild and tangy.  It has quite a strong aroma of fungus and clean wool.&lt;br /&gt;
&lt;br /&gt;
Taking 2-4 months to mature, the [[cheese]] is cylindrical in shape with grooves, rather than the more traditional plaits in its wrinkled, orangey-white rind.  The yellowish-white interior gets darker towards the rind and has a small number of holes.  Each [[cheese]] weighs around 500 g.&lt;br /&gt;
