Los Meleses is produced by Quesos Radiquero from pasteurised goats’ [[milk]] in Somontano in the province of Huesca.  They are hand-made and the goats feed on shoots, fresh grass, [[berries]] and wild [[fruit]] in the Sierra de Sevil.  &lt;br /&gt;
&lt;br /&gt;
This is a creamy [[cheese]] with intense flavour and velvety aroma, making it pleasant on the palate.  It has an edible, white mouldy rind and a soft interior.  As the cheese matures it changes its texture, which becomes increasingly creamy (from outside to inside) to increase its original flavour and in turn making it more intense on the palate and nose.   It is matured for at least 30 days.  It is manufactured in rounds of 400 g and 1.4 kg  and  measures approximately 8 cm in diameter and 7 cm in height.&lt;br /&gt;
