| 175 ml/6 fl oz dry white wine or [[sherry]] &lt;br /&gt;
| Salt &amp;amp; freshly ground [[black pepper]]&lt;br /&gt;
| Finely chopped [[chives]] to garnish&lt;br /&gt;

| Season a little flour with [[black pepper]] and coat the liver&lt;br /&gt;
| Heat 25g of [[butter]] and 2 tablespoons of olive oil in a frying pan&lt;br /&gt;
| Add the liver and cook for 2 minutes a side&lt;br /&gt;
| Season with a little [[salt]]&lt;br /&gt;
| Reserve the liver to a plate and keep warm&lt;br /&gt;
| Add the shallots to the pan and cook over a gentle heat for about 10 minutes&lt;br /&gt;
| [[Deglazing|Deglaze]] the pan with the wine and continue cooking until the liquid has reduced by half&lt;br /&gt;
| Add the remaining 15g of [[butter]], stir and remove from heat&lt;br /&gt;
| Pour the sauce over the liver, garnish with the chopped [[chives]] and serve&lt;br /&gt;
