Las Alpujarras is a pressed, goats’ [[milk]] [[cheese]] produced in the mountains of the provinces of Granada and Almería.  Although made throughout the year, production is mainly from winter to early summer.  It is produced as either ‘fresh’ or ‘mature’.&lt;br /&gt;
&lt;br /&gt;
The [[cheese]] is slightly spicy and salty, and buttery on the palate with aromas of nuts and late hay.  It has an elastic texture and the ivory white colour normally associated with goats’ [[cheese]].  It has a natural rind, which is oiled or brushed giving it a straw yellow colour and it is cylinder-shaped.&lt;br /&gt;
